I too, love anything with coconut~the cookies turned out beautifully! I guess the rain didn't have any effect on their crispiness, the humidity here in Florida does make a difference on baking days! I received an email from a good friend in Melbourne,AU and they are having a rainy winter, but really needed it.The rainy days sometimes produce some outstanding tidbits from the kitchen! Cheers...

I am a coconut lover, so this is right up my alley!! I just made a chocolate coconut sorbet, and was thinking that I should make a regular coconut sorbet next - now you've provided me with a recipe!! I love the cookies - looks fabulous.
